Infrared Grilling: Facts To Satisfy Your Curiosity
Most people don't know that infrared grilling is a tasty and convenient cooking method that draws on some of the best aspects of outdoor food preparation while avoiding many of its inconveniences and limitations.
Infrared grills are one of the newest ways for the average back yard griller to barbecue restaurant quality steaks these days. It used to be that the infrared technology was only available to commercial businesses. However now this technology is available to consumers as well, with residential grill manufacturers making many models available to the home market.
Whereas regular charcoal and gas grills cook food indirectly by heating the surrounding air, an infrared grill cooks meat and other foods directly through the use of a heated ceramic tile or stainless steel burner. The infrared radiation produced by heating the burner sears the meat on the outside and locks in the juices on the inside. This produces a nice charbroiled steak that is usually only found in fine restaurants. Now you can do it at home. Here are a few tips to help you learn how to barbecue with an infrared grill.
The first thing you need to do is fire up your infrared grill. These are powered by either propane or gas. Usually there will be a start knob for you to push in to turn on the burner. Once you have pushed the ignite button make sure the flame is lit. You will need to wait a couple of minutes for the burners to heat up. It won't take as long as regular grills, as infrared burners tend to heat up very fast.
Once the burner has heated up, set the temperature to your preference. Next place your steak or other food on the rack that is above the burner. Leave the meat on for about a minute and then turn it over to sear the opposite side. Infrared grills do heat and cook meat very quickly so you may want to use a thick cut of meat.
Your next step is to thoroughly cook your meat to whatever final state you would like it to be. You may like your meat rare or medium rare or well done. There are two main ways to accomplish this. The first way is to keep your meat on top of the burner and flip it every 30 seconds to one minute until the meat is done. Using this method, it should only take about four to five minutes for your meat to be thoroughly cooked. The other way you can finish cooking your meat is to move it off the infrared burner and finish the cooking the old fashioned way like you would with a traditional barbecue grill. It will take longer, but with this slower method of cooking you are less likely to overcook your meat.
Once you think your meat is done, take it off of the infrared grill and cut into it to be sure it is thoroughly cooked. If so, then turn off your grill to let it cool down.
